Leeks belong to the allium vegetable family together with garlic and onions. Leeks contain a wide array of sulfur compounds which gives them their taste and smell together with various health benefits including cardiovascular protection, anti cancer activity, lowering cholesterol and blood pressure. To maximise the goodness of the sulfur compounds once chopped leeks should be allowed to sit for a few minutes before being boiled, steamed, fried, roasted or made into soup.
